What was measured
Brief review of the development of ideas on the antioxidant activity of carnosine and related compounds across models of free radical chain reactions.

What the authors reported

The author concludes that carnosine is a potent hydrophilic antioxidant with direct non-enzymatic action, characterised by high reactivity towards the hydroxyl radical, but that its known biological effects cannot be explained by antioxidant properties alone.
