- What was measured
- Purification of carnosine N-methyltransferase (the enzyme that makes anserine from carnosine) from chicken pectoral muscle, mass spectrometry identification and recombinant expression.
What the authors reported
Carnosine N-methyltransferase was purified about 640-fold from chicken muscle, yielding three co-eluting polypeptides of about 23, 26 and 37 kDa. Mass spectrometry identified histamine N-methyltransferase-like protein as the only meaningful candidate. Recombinant chicken protein expressed in COS-7 cells formed anserine. Of the carnosine-related compounds tested, including histamine and L-histidine, carnosine was the only methyl group acceptor.
Limits of this study
Enzyme identification in chicken; the mammalian enzyme is not addressed in the abstract. Full text not read.
