- What was measured
- Protein cross-linking by 4-hydroxy-2-nonenal (HNE) and the structure of carnosine-HNE adducts.
What the authors reported
Carnosine inhibited HNE-induced protein cross-linking by trapping HNE in stable adducts, an effect the authors suggest is enhanced by metal chelation. The main adduct was a 13-membered cyclic product formed through Schiff base formation and imidazole conjugate addition.
