- What was measured
- Rates of hydrolysis of carnosine, anserine, ophidine, homocarnosine, N-acetylcarnosine and carcinine by human serum carnosinase and rat kidney carnosinase.
What the authors reported
Carnosine was hydrolysed 3 to 4 times faster than anserine or ophidine by both enzymes, while hydrolysis of homocarnosine, N-acetylcarnosine and carcinine was negligible. Methylation, decarboxylation or acetylation of carnosine therefore increases resistance to enzymatic breakdown and may prolong tissue half-life.
Limits of this study
Enzyme kinetics in vitro. Abstract only.
