- What was measured
- Hydroxyl radical scavenging by carnosine and 2:1 carnosine-Cu(II) solutions across pH, by pulse radiolysis and Raman spectroscopy.
What the authors reported
Carnosine interacted with hydroxyl radicals through its imidazole group, with or without copper ions. Oxidation of the copper(II)-carnosine system depended on the pH-dependent structure of the complex. Raman spectra indicated a dimeric species with two carnosine molecules complexed to two Cu2+ ions at alkaline pH, which the authors say directs hydroxyl attack more selectively, with positions C(2) and C(5) of the imidazole ring preferred. The authors conclude copper chelation is not detrimental to carnosine's scavenging ability.
