- What was measured
- Transient species formed when aqueous carnosine at different pH values was exposed to hydroxyl radicals generated by a 12 MeV electron linear accelerator.
What the authors reported
Carnosine's protonation state determined where hydroxyl radicals attacked the imidazole ring, with C(2) and C(4) the preferred sites. Carnosine was a good hydroxyl radical scavenger and formed a more stable intermediate that was less reactive than carnosine itself.
Limits of this study
