What was measured
Review of the role of non-enzymatic glycation in ageing and diabetic complications and of dietary carnosine as a potential anti-glycating agent.

What the authors reported

The author proposes that carnivorous diets supply carnosine, a potential anti-glycating agent, whereas vegetarian diets lack it, and discusses possible effects of carnosine and related structures on protein carbonyl stress, AGE formation, secondary diabetic complications and age-related neuropathology.

Limits of this study

Hypothesis review; no new data. Abstract only.
