Carnosine prevents the glycation-induced changes in electrophoretic mobility of aspartate aminotransferase

Seidler NW.. Journal of Biochemical and Molecular Toxicology, 2000; 14(4):215-220.

Laboratory studyOther animals

Design
Laboratory study
Dose used in the study
1 to 20 mM carnosine
Duration
4 days at 37 degrees C
What was measured
Electrophoretic mobility of purified cardiac aspartate aminotransferase (2 mg/mL) incubated with 500 micromolar glyceraldehyde 3-phosphate with or without carnosine.

What the authors reported

Carnosine at carnosine-to-glyceraldehyde 3-phosphate ratios of 10:1 or higher prevented glycation-induced modification of the enzyme. The modified form's apparent molecular weight shifted after two days, which the author interprets as rearrangement of the initial adduct.

Limits of this study

Cell-free in vitro system. Full text not read.
